FINESTRAT, Spain — On a sunlit terrace overlooking the Mediterranean, Strat, a relatively new restaurant in Finestrat’s Cala, has recently unveiled a tasting menu that reads like a love letter to modern Mediterranean cuisine. The brainchild of MasterChef Professional winner Claire Hutchings, the menu is steadfastly seasonal yet playfully inventive

A Prelude of Precision
The evening begins with a quartet of canapés: bite‐size masterpieces that tease the palate, crisp-textured mousses and delicate amuse‐bouches. Shadowed in black-and-orange sesame, one canapé lends a striking visual cue; another marries smooth, mousse-like richness in a mouse bouche that punctuates the early courses.
Next arrives a tomato‐burrata duet, crowned with oscillating pearls of caviar—salt‐bright beads that elevate creamy lusciousness into savory refinement.

Classic Meets Contemporary
The momentum continues with a reimagined vitello tonnato, a chilled cut of veal adorned with a silky, caper-laced tuna sauce. It strikes a balance between nostalgia and novelty. Patrons may choose to accessorize their dish with Oscietra caviar, a luxurious addition that can be easily incorporated into the dish.
To end the night we go for the dessert titled “Orange, black sesame, basil & white chocolate” inverts expectations. Vivid citrus opulence meets smoky sesame depth, brightened by basil’s freshness and rounded out with white chocolate’s indulgence. It’s a refreshingly modern composition—an echo of the savory palette just left behind.
The Broader Canvas
The full tasting menu is priced at approximately €75 per person (excluding beverages), offering a thoughtful journey from amuse‐bouche to final sweet note. Wine pairings, though not detailed here, are expected to complement the menu’s balancing act between brine, citrus, and cream.
Set within a calm dining room, Strat positions itself as an intimate setting for couples, small groups, or solo diners seeking to explore contemporary Mediterranean fare with a creative edge.
As the region awakens to a new wave of culinary creativity, Strat stands out for its delicate fusion of seasonal local produce, inventive flavor pairings, and restrained execution. Here, Chef Hutchings shows not only technical skill but a clear voice, each dish calibrated to resonate, not to shout.
Strat’s latest tasting experience feels less like a menu and more like a curated narrative—each course a chapter, each flavor a distinctive note. It’s a Mediterranean story, told quietly, yet with unwavering confidence.
