With her background in French culinary training and a passion for Spanish ingredients, the creations of Emmanuelle Baron are sure to delight even the most discerning of palates.
It all began at the tender age of 15, where a passion for cooking led her to start her training in gastronomy at the École hotelière SAINT MICHEL MONT MERCURE, in France. Two years later, her studies would take her to the École hotelière LA BONNAUDERIE in Cholet.

With an appetite for knowledge, she pursued internships at the Bistros d’Encenis restaurant and the 5-star Hotel Restaurant La Chaumiere, all while continuing her studies. Other impressive positions throughout her career include head of a division at Atelier Joel Robuchon, London, Covent Garden. She also completed yet another internship at the prestigious Lasarte run by Martin Berasategui (3 Michelin Stars and 3 Repsol Suns).
Emmanuelle Baron’s meteoric rise within the BonAmb Group
Her illustrious career has led her to work alongside chef Alberto Ferruz as his second chef at the El Segaria Restaurant of the Marriott Hotel in Denia. Those ‘in the know’ will, of course, recognise Chef Ferruz as being synonymous with BonAmb restaurant.
Having spent 12 years as his ‘right hand’, Emmanuelle Baron began working for the BonAmb Group in 2011. In 2019, she was appointed as a gastronomic advisor at Restaurante Casa Pepa, before taking over the reins in 2023.
Emmanuelle Baron believes continual learning is key to success
Baron’s culinary philosophy is deeply rooted in the legacy of Pepa Romans while embracing modern Mediterranean sensibilities. Freshness, texture, and emotional resonance are her priorities.
As she says, “In the kitchen, the important thing is never to lose the desire to learn”.
It is this focus on continual learning, combined with flavoursome, seasonal ingredients, that has brought a new energy to the restaurant. Under her leadership, Casa Pepa’s is showcasing creativity without losing sight of comfort, simplicity, and regional identity.
