
As the temperature cools, the kitchen at Restaurante Nomada Dénia is warming things up with a brand-new winter menu, a carefully curated collection of seasonal dishes that blend Italian comfort, Mediterranean produce, and Nomada’s signature approach to quality and creativity.
Chef Mauro Gullí and the team have introduced a variety of new plates and returning favourites with a twist, offering something for every palate, mood, and moment.
New Starters with Depth and Detail
Begin your meal with one of the elegant new antipasti options. The Insalata di Tataki di Tonno pairs seared tuna with crisp salad textures and just the right balance of freshness and umami:light yet satisfying.

Another standout is the Tartare di Fassona, a reimagined version of a beloved Nomada classic. This time around, the tartare is refined, with deeper layers of flavour and updated garnishes that make it both familiar and exciting.
Then there’s the Bagna Cauda Piemontese, a comforting nod to the north of Italy. Rich, warm and anchored by anchovies and garlic, this traditional dip is served with seasonal vegetables and is perfect for those who love bold, rustic flavours.
Winter Mains with Substance and Soul
The heart of the menu lies in its mains, each designed for lingering dinners and long conversations. The Tacchino brings turkey to the table in a way you may not expect: tender, juicy, and packed with Mediterranean character.

Meat lovers will gravitate to the Cotoletta di Maiale, a beautifully crisp pork cutlet served with care and classic accompaniments. For seafood fans, the Guazzetto di Pesce is a standout: a rich, hearty fish stew that captures the essence of coastal winter cooking.

This season’s desserts are built to comfort and delight. The Zuppa Inglese Croccante offers layers of cream and crunch, while the playful Bomboloni di Pizza turns the beloved pizza dough into golden, sweet bites that surprise and satisfy.
For chocolate lovers, the Tortino Cuore di Cioccolato delivers molten decadence in every spoonful, and the delicate Bavarese adds a light, creamy note to end your meal on a graceful high.

Events in December
Winter at Nomada isn’t only about what’s on the plate. As the year comes to a close, the restaurant remains open through New Year’s Eve, with live music and its signature Tardeo atmosphere continuing into the final days of December.
