Our fine dining adventure at Las Cuevas in San Miguel de Salinas marked our first visit, although we had heard countless glowing reviews from friends. Now, having experienced this exquisite fine dining establishment for ourselves, it’s easy to see why it’s a favourite with so many.
From the moment we arrived, we were captivated by the entrance, adorned with warm lighting and a delightful Christmas tree, which gave it a cosy, welcoming vibe. Yet, the true magic awaited us inside. One of the standout features of Las Cuevas is its stunning location within 500-year-old caves, creating an intimate setting that feels like a unique escape into your own ‘private’ restaurant.

We were surprised by just how many caves there actually were, each one different in size and character. This makes it the perfect place for lively gatherings with friends, as well as romantic dinners for two. Our attentive waiter guided us to our seats and enthusiastically walked us through the special menu, which was crafted just for us by Head Chef Vlad.
Las Cuevas fine dining: A three-course feast
Our starters: Steak tartar, Fresh pasta with gorgonzola sauce, Duck pâté
It was honestly impossible to select a favourite among these exquisite dishes. Each plate was beautifully presented, a true work of art, so much so that it felt a shame to eat it! But indulge we did, starting with the steak tartar, which danced on the palate with a delightful sweetness from a burst of juicy red currants.
Next, we were treated to the duck pâté, an experience unto itself; it is no wonder that it is so popular with diners. Rich and creamy, with a mousse-like texture that melted effortlessly in the mouth. Finally, we savoured the pasta, light in texture, enveloped in a delicate sauce. The finishing touch was the caramel crunch clusters and red currants, which added a subtle sweetness that was simply divine.
Our main courses: Fillet steak Rossini, Fillet steak Galicia, Steamed sole
After enjoying such delightful starters, we couldn’t help but have high expectations for the mains, and they absolutely delivered. We dove into the fillet steak Rossini, exquisitely adorned with rich foie gras and accompanied by a luscious red wine reduction, carrots, tender broccoli, and a rich potato gratin. Each bite was a revelation—the steak medallion was not just cooked to perfection but was so succulent it practically melted in our mouths.

As we moved on to our second steak of the evening, we were treated to a Galicia steak fillet that burst with a bold, peppery flavour. Each bite was an adventure, beautifully harmonised by the luscious sweetness of the accompanying sauce. It was a delightful balance that elevated the experience to new heights.

Finally, we were served the steamed sole, elegantly presented with a luxurious champagne sauce. The fish, rolled to perfection, was a true delight; its buttery, fragrant flesh practically melted in the mouth with each bite. The gentle flavours of the sole blended gracefully with the creamy sauce, elevating the dish without overshadowing its delicate essence.
Our desserts: White chocolate sphere, red wine marinated apple
The white chocolate sphere is undoubtedly one of the most exquisite desserts I’ve ever had the joy of tasting. It transcends the typical dessert experience, transforming into a stunning piece of art before your eyes.
The magic unfolds when hot caramel sauce is poured over the delicate sphere, melting the white chocolate and unveiling a luscious interior. Inside, you’ll find creamy vanilla ice cream, perfectly paired with crunchy toffee nuts and vibrant, fresh raspberries. This really is a taste of heaven; there is no other way to describe it.
If the white chocolate sphere was a heavenly delight, then the red wine-marinated apple was pure Christmas magic on a plate. The moment it graced the table, a symphony of aromas wafted through the air, filling the room with the warm, inviting scents of cloves, star anise, cinnamon, and nutmeg.
This dessert was a beautiful balance of contrasts: the vibrant zing of the apple, the luscious sweetness of homemade ice cream, and the burst of red fruits. Each bite captured the essence of the festive season perfectly.
